What is your problem with cruise altitude? You don't actually say

Before you compile your flight in PF2000 you should select the cruise altitude. If you want to change the altitude before you start the flight you can do so through PFE.

If you wish to change altitude during flight you use the keys as detailed in the manual, although this may cause problems with getting timely descent instructions.
