The problem is that from TOC in Finland to the last waypoint (over Germany) ATC never pass me to a different center from the first one

I will attach logs later, anyway controller didn't pass me to another center, and my copilot change frequency for me, so no error in that way
If your co pilot changed frequencies he would only do that under instruction from ATC. So that suggests that you were handed over to control centres at least in the part of the flight you completed.

In my opinion is not normal to remain in control with Frankfurt over Canaries islands....

There definitively is a bug visible in your log for EFHK to LIMC (EDDF - LPMA is not included, just KPBI to KWBI with proper center handover):
24/02/2016 20:48:24: 550 - Transcript: 'Finnair 793 Contact departure on 132.6  '
24/02/2016 20:51:47: 100 - Transcript: 'Finnair 793 Contact CONTROL on 132.6  '
And no other handovers ... and this one doesn't have a real name and the frequency is the depature frequency!

The problem may already be at the first waypoint (DOBAN), where it shows center 999 (which does not exist!):
[WP0]
sWPID=EFHK
sWPType=A
sWPLat=060.32
sWPLon=024.96
sWPCtr=18
sWPSec=06
sWPFreq=132.60
sWPAlt=180
Accent=23
Backup=23
Dist=00
Route=
[WP1]
sWPID=DOBAN
sWPType=I
sWPLat=059.79
sWPLon=024.45
sWPCtr=999
sWPSec=999
sWPFreq=118.65
sWPAlt=34000
Accent=0
Backup=0
Dist=35
Route=
[WP2]
sWPID=MUSTI
sWPType=I
sWPLat=059.75
sWPLon=024.37
sWPCtr=18
sWPSec=547
sWPFreq=119.95
sWPAlt=34000
Accent=11
Backup=8
Dist=38
Route=
Edit: your PF3/Flight/FPP/ directory contains a file named something.json, you can upload it to http://geojson.io/ to see your waypoints and the center boundaries.

With geojson.io you can see the problem, there is a gap in the center boundaries and one of your waypoints is exactly in this gap:

As a workaround you can try removing DOBAN from your flight plan.
(and PF3 should have warned you about DOBAN and MUSTI too close together, unless you have disabled warnings, but in this case the warning should be unrelated to the problem, just a coincidence)

There is a very bad fit between Lisbon Control and Control to its West. Also further South the map needs to be edited carefully there. In the mean time adjust the fpl to avoid these areas.

The Control Centre Map in that area is a bit of a mess. Borders don't match etc. I stress it is not PF3. PF3 has to use this control centre mapping.
For EDDF-->LPMA I would suggest this route
EDDF-LPMA.zip
(1.12 KiB) Downloaded 263 times
. If you have problems with this routing then obviously we'll try to sort it. But also if it's ok we need to know.
Bear in mind this is an FS9 flight plan.
