In the SID/STARS dialog, the maximum transition altitude that can be set is 19000 feet. However, there are evidently some areas with higher TAs, specifically as I've found in Belize (MZBZ) which has a TA of 19500 feet (TL of FL200). Not sure if/how many others there are. Obviously, a minor concern, but any chance this could be accommodated?

Sure, that's an easy change and I'll make sure it's in 3.22.0 which is very imminent.
