I have purchased PF3 & now would like to delete the demo. Will deleting it cause PF3 to have issues?

It certainly shouldn't but I'm sure you'll let us know if it does.

Worse case scenario is you'd have to reinstall PF3 :)

I deleted the demo and the PF3 installation survived unchanged.
And I installed a newer version of demo again, still everything fine.
