'Turning Off' was an incorrect description... increasing the altitude as you have done is correct

So sorry I let this one slip by without posting an answer. You said in you OP you can't get PF3 to give you 'Altimeter' instead of 'QNH' yet your log shows differently 30/11/2021 23:36:25: 840 - Transcript: 'Redair Papa Hotel Mike Juliet Victor Readback correct. PF3 VCP Mode 3 will set the AP alt, hdg and spd. This should work with all default FS aircraft. Some high-end third party aircraft use their own AP which PF3 cannot interact with. Aerosoft's CRJ works fine with PF3 as it's my go to aircraft>

In MSFS you just need a flight plan with the departure and destination set to the same airport. In PF3 I would suggest selecting VFR Free Flight and then you can basically do what you wish but still get cleared to land when you're ready to do so

No, you can only restart a flight mid-way through if it was a PF3 flight and you had the 'restart' option turn 'on' Please check the User Guide... page 100

Ah, just remembered, that window's position is held in the registry.

If you're happy using RegEdit just navigate to

Computer\HKEY_CURRENT_USER\SOFTWARE\VB and VBA Program Settings\PF3 - ATC at its best\frmATC

Then delete the entry LastSavedState

Restart PF3 and you should be good to go

Looks like a PF3 positional windows issue... double click on the main menu OnCourse Software picture and reset PF3 windows
